I am on the smoothie bandwagon at the moment and made this concoction the other morning and thought I’d share it with you as it’s not only a beauty on the eyes, but it tasted amazing and took 2 minutes to make.

The colour was from raw beetroot, I bought a bunch of organic beetroot, scrubbed it, and left the peel on and then just blitzed it in my Vitamix / Nutribullet along with the other ingredients, and my breakfast was created within minutes. The cinnamon and vanilla plant protein lifted the beetroot flavour and sweetened it up and the fresh mint made it extra fresh tasting.

All in all, it was a winning breakfast and I was full all morning-long with just one glass. If I had a couple of brazil nuts I would have thrown them in there also or a few cashews to make it extra creamy, but you can’t go wrong with putting whatever veggies and fruit you have in your fridge, into your blender, adding some liquid (coconut milk, almond milk, filtered water or coconut water), keeping your fingers and toes crossed, and enjoying your latest invention!

I’ll be adding lots more smoothie recipes in the next month when I have access to a new plant base smoothie mix, packed with fibre, good fats, really clean ingredients and a nice packing of protein, which I’m going to be using from now, but it doesn’t get released into the market until June 4th.

Beetroot breakfast smoothie

Serves: 1
  • 1 fresh beetroot
  • 300ml filtered water
  • ¼ cucumber
  • 1 teaspoon cinnamon
  • 1 scoop vanilla plant protein
  • 1 handful fresh mint
  • 4-5 ice cubes
  1. Blend all the ingredients in a food blender.
  2. Drinking it through a striped straw is totally optional, but it saves the teeth and tongue from going pink.
