It’s just under T H R E E weeks now until I get married (!) so smoothies, juices, soups and religious vitamin taking have gone up a notch to make sure my skin, energy and immune system are extra looked after!!

I have been batch making everything and freezing it wherever possible as life goes on when you are planning your own wedding and I’ve been here there and everywhere with work projects and nutrition speaking engagements overseas so I’ve had to get ultra organised – much like you I expect with your busy world!

I was experimenting with juices for a project I’m working on and was having so much fun with straws and veg, but this green rebound juice perked me right up so I thought I would share it with you 🙂 I tripled the quantity and bottled it up in a glass jar and kept it in my fridge and it was the perfect pre and post work pick-me-up.

Mint, fennel, apple and cucumber are such a simple combination and they are all individually a great source of vitamin C which is needed inside our bodies as an essential cofactor in numbers enzymatic reactions e.g. in the formation of collagen, carnitine and catecholamines and it’s also a potent antioxidant.

The thing about vitamin C, is it’s a water soluble vitamin (along with folate, thiamine, riboflavin, niacin, pantothenic acid, biotin, vitamin B6 and vitamin B1), so it has to be consumed throughout the day as whatever your body doesn’t utilise there and then, it is excreted via your urine, so that’s why I like to have little glasses of fresh preshed veggie/ fruit juice throughout the day to give my cells constant vitamin C exposure.

  • ½ cucumber, peeled if not organic
  • 1 apple
  • ½ fennel
  • 20 mint leaves
Instructions
  1. Wash all your ingredients and peel where instructed.
  2. Juice them one by one in the order they are listed and serve chilled or enjoy over ice.
