These stars were the result of a big baking experiment last week and it turned into one of the best Christmas bakes as these almond stars were born! They're the simplest things in the world to make and depending on the cutter shape you use will steer the occasion! Almonds, dates, lemon juice, coconut oil, spices and 7 minutes in the oven, makes for delicious festive treats!
Ingredients
200g of ground almonds
3 tablespoons of coconut oil
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
2 tablespoons lemon juice
a pinch of Himalayan pink salt
10 medjool dates (200g), stones removed
1 tablespoon desiccated coconut for decoration (optional)
Instructions
Preheat the oven to 180°C.
Add all the ingredients to a food processor, ensuring the all stones from the dates are removed.
Mix thoroughly until the dates are well combined with the almonds. The mixture should be moist and able to stick together to form a dough.
Tip out the dough onto a lightly floured surface and roll out until it’s about 3mm thick.
Using a shaped cutter (I usually do stars or hearts) cut out as many shapes as you can. You may need to re-roll the dough trimmings dough couple of times to allow you to use up all the mixture.
Using a spatula, transfer the shapes onto a baking tray lined with baking paper and place in the oven for 7 minutes, or until the pastry goes golden brown in colour.
Remove from the oven, leave to cool before lifting the biscuits off the trays.
Dust with some cinnamon or desiccated coconut and enjoy hot or cold!
