Have to try wraps, a quick mid-week healthy dinner

Dinner ideas when you’re short on time and get home late can be a tricky one but these wraps are such a life saver! I have salad wraps at least twice a week mid-week during the summer-time and in the winter time I do the same, but I heat up my prawns or I make warm chilli mince to go inside the cabbage or lettuce wraps to make it more of a comforting dish. They’re the perfect quick mid-week healthy dinner. So dreamy.

It’s a great way of using up leftover veg in the fridge. Grated carrot and beetroot is my favourite filler, along with avocado – either sliced up or mashed up as guacamole with chilli flakes, lemon juice and black pepper. Cucumber gives the wraps a nice crunch and hummus is just awesome with everything but in these wraps it gives it a smooth and creamy consistency. A herb, either basil, coriander or fresh parsley tastes amazing and really adds to the flavour (basil is my favourite) and then add in your protein hit; either shredded chicken, flaked salmon, tuna or prawns work amazingly, or chilli mince in the winter-time.

This is what the wraps and my prep space looks like beforehand, so if your kitchen looks like this, you’re on the right track and totally normal!! I’ve yet to prep this meal neatly!

Amazing dinner inspiration when you're short on time! These wraps are so quick to prepare, they taste amazing and they keep you full! they also use up a lot of leftover ingredients in your fridge! These wraps are an emergency go-to dinner idea in my house and I love them every time, especially with the hummus, avocado, basil and grated carrot and beetroot combination!
  • Lettuce cups
  • Beetroot, grated
  • Carrot, grated
  • Cucumer, cut into batons
  • Hummus
  • Basil
  • Prawns
  • Avocado, sliced
  1. Chop, grate and shred your ingredients and layer them onto your lettuce or cabbage leaf ready for a new healthy wrap experience.
  2. Get friends and family involved and make extra toppings so they can serve as leftovers for your lunch tomorrow.
  3. Enjoy!
